I'll buy a pair of binoculars for bird watching and animal observations. I want to know what a good magnification to see the animals up to a mile away?

You need a high cost performance specifications for a mile, the $ $ $ is. You do not really need anything as powerful for birds and other wildlife, if I were you, I would go with 10x50. The Simmons is very good. They also look impressive on the moon, check it out.
